Gluten-Free Waffles

Hi there! I’ve tweaked several other gluten free/Paleo waffle recipes, and have settled on this little creation. It’s rare to find something that my crazy belly always tolerates, but this recipe is one that it’s always happy with. These are awesome with berries, applesauce, or Grass fed butter and pure maple syrup.

I hope they make your belly as happy as they do mine 🙂

  • 3 Eggs
  • 3/4 teaspoon Baking Powder
  • 1 dash Cinnamon
  • 1 dash Sea Salt
  • 1 teaspoon Psyllium Powder
  • 1 teaspoon Grass-fed Gelatin- Optional
  • 1/2 Cup Arrowroot or Tapioca Starch/Flour (either works great :))
  • 1/2 Cup Unsweetened Applesauce (I use 1 Applesauce Cup for lunches)

 

  1. Plug in waffle iron to heat while you prep waffles.
    Crack eggs into a small bowl. I use a wide mouth pint mason jar.
  2. Add everything else except the applesauce and mix. You do not need to mix this perfectly- I once made a big batch in the blender and they weren’t as good- so less is better here.
  3. Add Applesauce and mix again.
  4. Spray waffle iron with a little coconut oil. Pour a little in your waffle iron and let it cook for about 4 minutes or until lightly golden, or as done as you desire. The time will depend on your waffle iron.
    These do like to overflow as they cook, so a little less is better than too much.
  5. Repeat until all your batter is used up and enjoy!
