Blondies

My Sweet Sister in law, Kathy, gave me this recipe years ago, and it will always be a favorite! It is my go-to whenever we need a quick treat. Everyone loves them and I can whip these up without even thinking. I always have lots of volunteer taste-testers 😉

This recipe is for a 13"x9" pan, but it's super easy to halve the recipe and use an 8"x8" pan! Just shorten the baking time by about 5 minutes 🙂

  1. Turn Oven on to 350 F while you melt the butter. Spray pan with nonstick spray. (I use coconut oil)
  2. Add all ingredients to the bowl of your mixer if you have one- otherwise a medium sized bowl.
  3. Mix well and pour into pan.
  4. Bake at 350 for around 23-28 minutes. I check them at about 23 minutes and go from there. You want them to be just barely browning on the edges, and kind of gooey in the middle- but where a toothpick barely comes out clean. These really firm up when they cool, so you don't want to over-bake.
  5. I like to cut these with a plastic knife while they are still warm.
  6. Serve and enjoy!
