Awesome Chocolate Chip Bundt Cake

You are in for a treat with this recipe! My amazing sister-in-law, Abigail, introduced us to an incredible cake from a place called Nothing Bundt Cakes when we were visiting- and it was so delicious! My family requested the same cake when we got home- but being over 1,000 miles away from the source- it was time to come up with our own version. This is now THE go-to around here. It originated as a bundt cake, but it also makes fantastic cupcakes and layered cake as well!

Cake Dry Ingredients

  • 2 Cups Flour

  • 1 3/4 Cups Sugar

  • 3/4 Cup Cocoa Powder

  • 2 teaspoons Baking Powder

  • 1 teaspoon Baking Soda

  • 1/2 teaspoon Salt

  • 1 Small Package Instant Chocolate Pudding Mix

  • 5 Tablespoons Shortening

Cake Wet Ingredients

  • 1 Cup Sour Cream

  • 4 Eggs

  • 1/2 Cup Water

  • 1/2 Cup olive oil

  • 1 teaspoon Vanilla

  • 1 1/2 Cups Chocolate Chips

Frosting

  • 1 Package (8 oz) Cream Cheese, softened

  • 1 Stick Butter, softened (1/2 cup)

  • 1 teaspoon Vanilla

  • 1 1/2-2 Cups Powdered Sugar

 

For the Cake

  1. Preheat oven to 350, then grease a bundt pan.

    *If you are doing cupcakes, fill your cupcake pans with liners.

    *For layered cakes, I like to line the bottom of the pan with parchment paper, then spray.

  2. Add all of the cake dry ingredients to your mixer bowl, and mix until the shortening is incorporated.

  3. Then add all the wet ingredients, except the chocolate chips, and mix well.

  4. Add chocolate chips and mix again.

  5. Pour into prepared pan(s), and bake-

    Bundt Cake- 45-50 minutes.

    Cupcakes-18-22 minutes

    Layered Cake- 22-24 minutes (I made 4 small layers)

  6. Once baked, remove from oven and allow to cool while you make the frosting.

Frosting

  1. Beat cream cheese and butter in mixer bowl. Add vanilla and mix again.

  2. Gradually add powdered sugar while mixing. Once smooth, you can divide into bowls if you are going to make different colors.

  3. To frost as shown in the picture, snip a corner off a gallon sized ziploc bag, and place a frosting tip coupler inside, and screw the ring on with no tip attached. Dump the frosting in the bag, and frost the cake with stripes, as shown.

    Alternately, you can pipe circles on cupcakes the same way, or frost however you’d like 🙂

I hope you love this as much as our family does!!

This cake freezes well, too! Just wrap the unfrosted cake well, and freeze until you’re ready to party 🙂

    Heather – I finally made this recipe for Billy’s birthday which is this weekend. It made 3 small bundt cakes and 12 cupcakes. Awesomeness! So good. Hope everything at the ranch is great. Janet (Janet & Billy from p’dogging the last few years!). Have a great Christmas!
